Quote of the week and a recipe

Happiness does not consist in pastimes and amusements but in virtuous activities.

I baked, it looks good. This is a Polish recipe for an apple pastry or "Jablecznik" (YA-bue-chnik).

1 cup of flour
1/2 cup of sugar
1 tsp of baking powder
1 tsp of vanilla powder
2 sticks of butter
4 eggs
7-10 medium sized apples (shred them)
1/4 cup of sugar for apples (put aside)
Dash of cinnamon can be added to the shredded apples (optional)
Powdered sugar to add to the top when finished (optional)

Directions:
Mix dry ingredients, add butter, eggs and mix well so you don't have lumps.
Pour batter into greased dish (regular rectangular size, don't ask I grab what I have). Add shredded apples on top of the batter. If you have extra batter you can pour a little on top like I did. Notice the "M"?
350 degrees for 45 minutes. Enjoy!
